Basil pesto stuffed mushrooms

Serves 20

Tip: This appetizer can be prepared a day in advance. Refrigerate until ready to serve.

  1. Line crimini mushroom caps in baking pan.
  2. Add 2 cups fresh basil leaves.
  3. Add 2 tablespoons pumpkin seeds.
  4. Add 1 tablespoon olive oil.
  5. Add 1 tablespoon fresh garlic.
  6. Add 2 teaspoons lemon juice.
  7. Add 1/4 cup fresh Parmesan cheese.
  8. Add 1/2 teaspoon kosher salt.
  9. Process until evenly mixed.
  10. Stuff mushroom caps with basil pesto filling.
  11. Combine 1 1/2 cups panko breadcrumbs, 1/4 cup melted butter and 3 tablespoons chopped fresh parsley.
  12. Sprinkle each mushroom with 1 teaspoon panko topping.
  13. Bake 10 to 15 minutes at 350 F.
