Chicken Parmesan

Serves 4

Tip: Many chicken Parmesan recipes are drowning in cheese — and calories. This version uses a solid sprinkle.

  1. Add 1 cup panko bread crumbs.
  2. Add 1/2 cup grated Parmesan cheese. (Grated Parmesan works better than the shredded style shown in the video.)
  3. Add 2 teaspoons dry basil.
  4. Add 1 teaspoon garlic powder.
  5. Add 2 teaspoons dry oregano.
  6. Add 1 teaspoon onion powder.
  7. Pound out 4 chicken breasts to 1/4-inch thickness.
  8. Place 2 egg whites in medium bowl.
  9. Dip each chicken breast into egg whites.
  10. Dredge in breading mixture.
  11. Bake for 15 to 20 minutes at 375 F.
  12. Add 2 cups reduced-sodium marinara sauce.
  13. Add 1/2 cup shredded part-skim mozzarella cheese.
