Cranberry orange muffins

Serves 16

Tip: When baking, use Greek yogurt to reduce or replace shortening, oil or butter. This cuts fat and makes muffins extra moist and tender.

  1. Add 1 cup non-fat plain Greek yogurt
  2. Add 1 cup sugar
  3. Add 2 eggs
  4. Add 1/4 cup brown sugar
  5. Add 1/4 cup canola oil
  6. Add 2 tablespoons orange zest
  7. Add 2 teaspoons vanilla
  8. Add 1 3/4 cup all-purpose flour
  9. Add 1/4 cup flaxseed meal
  10. Add 1/2 teaspoon cinnamon
  11. Add 1 teaspoon baking powder
  12. Add 1 teaspoon baking soda
  13. Add 1/2 teaspoon salt
  14. Mix on low speed
  15. Slowly add dry ingredients to wet ones
  16. Mix for 1 to 2 minutes until incorporated
  17. Add 1 1/2 cups frozen cranberries
  18. Scoop 1/4 cup batter into each muffin tin
  19. Bake for 22 minutes at 350 F
