Tomato basil pesto sauce
Serves 15
Tip: To make this sauce in a hurry, use canned, diced tomatoes with no added salt instead of fresh Roma tomatoes. They will cook down faster.
- Add 1/4 cup olive oil.
- Add 4 minced garlic cloves.
- Add 1/4 cup red wine vinegar.
- Saute 2 minutes.
- Add 8 cups diced Roma tomatoes.
- Add 1/2 cup tomato paste.
- Add 12 chopped fresh basil leaves.
- Add 1 tablespoon sugar.
- Add 1/2 teaspoon salt.
- Add 1/4 teaspoon ground pepper.
- Simmer 8 to 10 minutes until tomatoes break down.
- Add 1/2 cup grated Parmesan cheese.
- Process until smooth.
